Sirloin Steak Fajita Burritos

Take your burrito to the next level.

Ingredients:

1 1/2 lb top sirloin steak, sliced into strips
1 packet fajita seasoning, 1 oz.
3 tablespoons olive oil
2 cups cooked white rice
1 teaspoon lime zest
1 teaspoon lime juice
1 green bell pepper, sliced into thin strips
1 red onion, chopped
1 can black beans, warmed, 15 oz.
2 cups shredded Mexican blend cheese
8 burrito size flour tortillas, warmed
Salsa, for serving
Sour cream, for serving
Guacamole, for serving

Directions:

  1. Toss steak with 1 tablespoon olive oil and 2/3 of the fajita seasoning. Add lime juice and lime zest to cooked rice. Stir together.
  2. Preheat large skillet to high heat. Add 1 tablespoon olive oil to pan and swirl to coat. Add steak and saute until browned. Transfer to a plate and cover to keep warm.
  3. Add the remaining tablespoon of olive oil to the pan and add the green pepper and onion strips and saute for about 5 minutes. Add last of the fajita seasoning to the veggies and toss to coat. Add steak back to the pan and saute for 3 minutes to reheat.
  4. Fill each tortilla with rice, beans, steak and veggie mixture, cheese and salsa down the center. Top with sour cream and guacamole. Fold the top end over then fold in both sides and roll up.
