Sirloin Steak Fajita Burritos





Serves 8 |
Take your burrito to the next level.
Ingredients:

1 1/2 lb top sirloin steak, sliced into strips+ Add to Shopping List |
1 packet fajita seasoning, 1 oz.+ Add to Shopping List |
3 tablespoons olive oil+ Add to Shopping List |
2 cups cooked white rice+ Add to Shopping List |
1 teaspoon lime zest+ Add to Shopping List |
1 teaspoon lime juice+ Add to Shopping List |
1 green bell pepper, sliced into thin strips+ Add to Shopping List |
1 red onion, chopped+ Add to Shopping List |
1 can black beans, warmed, 15 oz.+ Add to Shopping List |
2 cups shredded Mexican blend cheese+ Add to Shopping List |
8 burrito size flour tortillas, warmed+ Add to Shopping List |
Salsa, for serving+ Add to Shopping List |
Sour cream, for serving+ Add to Shopping List |
Guacamole, for serving+ Add to Shopping List |
Directions:
- Toss steak with 1 tablespoon olive oil and 2/3 of the fajita seasoning. Add lime juice and lime zest to cooked rice. Stir together.
- Preheat large skillet to high heat. Add 1 tablespoon olive oil to pan and swirl to coat. Add steak and saute until browned. Transfer to a plate and cover to keep warm.
- Add the remaining tablespoon of olive oil to the pan and add the green pepper and onion strips and saute for about 5 minutes. Add last of the fajita seasoning to the veggies and toss to coat. Add steak back to the pan and saute for 3 minutes to reheat.
- Fill each tortilla with rice, beans, steak and veggie mixture, cheese and salsa down the center. Top with sour cream and guacamole. Fold the top end over then fold in both sides and roll up.
