Salsa Verde Chicken Tacos

The very best flavors of the Southwest.

Ingredients:

1 tablespoon butter
1 Vidalia onion, chopped
2 teaspoon minced fresh garlic
4 cups cooked chicken, diced
1 packet chicken taco seasoning, 1 oz.
1/4 cup water
12 flour tortillas
Adobo seasoning, to taste
Salsa Verde, for garnish
2 cups shredded Mexican blend cheese
Prepared guacamole, for garnish
Sour cream, for garnish

Directions:

  1. Preheat large skillet over medium-high heat. Once hot, add butter, onions, and garlic. Saute for about 5 minutes, until onions are translucent.
  2. Stir in chicken and sprinkle with chicken taco seasoning. Add water and stir well to coat. Remove from heat and set aside. Cover to keep warm.
  3. Warm tortillas and sprinkle one side with Adobo seasoning, and fold in half while still warm.
  4. Fill tortillas with even amounts of chicken mixture, salsa verde, shredded cheese, guacamole and sour cream.
