Penne Pasta with Spicy Tomato Sauce

Pasta with a hot streak.

Ingredients:

2 lb penne pasta
2 tablespoons olive oil
1 red bell pepper, seeded and chopped
1/2 onion, chopped
4 cloves garlic, chopped
1 can crushed tomatoes with added puree, 28 oz.
1 can Italian-style stewed tomatoes, 14.5 oz.
1/2 cup dry red wine
1 1/4 teaspoon dried crushed red pepper
2 teaspoons dried oregano
1 lb hot Italian sausage, casings removed
4 oz mushrooms, sliced
2 zucchini, chopped
1/4 teaspoon sugar
1/2 teaspoon balsamic vinegar
Grated Parmesan cheese, for garnish

Directions:

  1. Cook the pasta according to the package directions and drain.
  2. Heat the olive oil in a large saucepan over medium heat. Add the bell pepper, onion and garlic and saute until tender.
  3. Add the crushed tomatoes, stewed tomatoes, red wine, dried red pepper and oregano, bring to a simmer.
  4. Cook the sausage in medium skillet over medium-high heat for 5 minutes.
  5. Transfer the sausage to the sauce. Reserve the drippings in the skillet.
  6. Add the mushrooms and zucchini to the skillet and saute over medium-high heat until tender. Once cooked, add veggies to the sauce, along with sugar and balsamic vinegar. Season with salt and pepper. Stir together.
  7. Transfer the pasta to a large bowl and toss with the sauce. Garnish with Parmesan cheese.
