Baked Rainbow Trout

Serves 6 Servings |
Ingredients:
2 whole rainbow trout, fresh, gutted and cleaned, head and tail on |
2 teaspoons olive oil |
1/4 teaspoon dried thyme |
1/2 onion, sliced |
Salt, to taste |
Ground black pepper, to taste |
1/4 teaspoon dill weed |
2 tablespoons hot water |
2 lemon, sliced |
Directions:
- Preheat oven to 400 degrees F. Pour 1 teaspoon of olive oil into a medium baking dish. Use a paper towel to grease baking dish.
- Place trout in the baking dish. Pour remaining olive oil over trout.
- Combine dill weed, thyme and salt in a small bowl. Season the outside and inside of trout with seasoning mix. Stuff trout with onion slices. Sprinkle outside of trout with pepper. Top trout with lemon slices.
- Place baking dish in oven and bake for 10 minutes. Pour water into dish and bake for an additional 10 minutes.
