Baked Rainbow Trout

Serves 6 Servings | 

Ingredients:

2 whole rainbow trout, fresh, gutted and cleaned, head and tail on
2 teaspoons olive oil
1/4 teaspoon dried thyme
1/2 onion, sliced
Salt, to taste
Ground black pepper, to taste
1/4 teaspoon dill weed
2 tablespoons hot water
2 lemon, sliced

Directions:

  1. Preheat oven to 400 degrees F. Pour 1 teaspoon of olive oil into a medium baking dish. Use a paper towel to grease baking dish.
  2. Place trout in the baking dish. Pour remaining olive oil over trout.
  3. Combine dill weed, thyme and salt in a small bowl. Season the outside and inside of trout with seasoning mix. Stuff trout with onion slices. Sprinkle outside of trout with pepper. Top trout with lemon slices.
  4. Place baking dish in oven and bake for 10 minutes. Pour water into dish and bake for an additional 10 minutes.
Course: Dinner
