Easy Salsa Chicken Skillet





Serves 4 |
A healthy dinner that’s on the table in 20 minutes!
Ingredients:
| 2 boneless, skinless chicken breasts |
| 1 1/2 tablespoons olive oil |
| 1 shallot, finely chopped |
| 2 teaspoon fajita seasoning blend |
| 1 jar salsa, 32 oz. |
| 1 tablespoon chopped fresh cilantro |
Directions:
- Cut chicken breasts into bite-size pieces.
- Pour the olive oil into a large skillet. Bring to medium-high heat. Once hot, add the chicken and saute until lightly browned on all sides. Add the shallot and cook until soft.
- Reduce the heat to medium. Sprinkle the fajita seasoning over the chicken and shallots. Stir together then pour in the salsa. Cook for 5 minutes. Then reduce the heat to low and cook for an additional 5 minutes.
- Transfer the chicken to serving plates. Spoon the salsa and shallots over top. Garnish with cilantro and enjoy!
