Cheddar Bacon Ranch Chicken Salad Sandwiches

Serves 8 | 
Perfect for lunchtime or a late night snack.

Ingredients:

1/2 cup shredded cheddar cheese
1/4 cup diced cooked bacon
1/2 cup ranch dressing
1/4 cup mayonnaise
2 tablespoons chopped fresh chives
4 cups chopped cooked chicken
8 sandwich rolls

Directions:

  1. Combine cheddar cheese, bacon, ranch dressing, mayonnaise, chives and chicken in a large mixing bowl. Stir together until well incorporated.
  2. Cover and place bowl in the refrigerator for about 2 hours to chill.
  3. Spoon a generous amount of chicken salad onto the bottom halves of the sandwich rolls. Place top halves of the rolls on the chicken salad to make the sandwich and enjoy!
