Melon Ambrosia Salad

Serves 4 | 

Ingredients:

1 cup cantaloupe, 1/2" cubes
1 cup honeydew, 1/2" cubes
1 cup seedless grapes, halved
1/3 cup fresh lime juice
2 Tbsp. sugar
2 Tbsp. honey
1/4 cup flaked coconut, toasted
2 Tbsp. fresh mint, chopped

Directions:

  1. In a large bowl, combine the cantaloupe, honeydew and grapes.
  2. In a separate bowl, combine the lime juice, sugar and honey; pour over fruit, tossing gently to coat.
  3. Cover and refrigerate for 1 to 2 hours.
  4. Sprinkle salad with coconut and mint. Serve.
Course: Salad
