Garden Veggie Salad

Serves 1 |
Light, Flavorful and oh so yummy.
|1/2 pint cherry tomatoes|
|1 Vidalia onion|
|2 bell peppers|
|1/2 bunch radishes|
|3/4 teaspoon salt|
|1/4 teaspoon pepper|
|4 teaspoons sugar|
|4 teaspoons vinegar|
|1 bag spinach|
- Clean and cut cherry tomatoes, cucumbers, carrots, Vidalia onion, bell pepper and radishes into small chunks and place in large bowl.
- Season with salt, pepper, sugar and vinegar and stir together. Place in the refrigerator for 2 hours.
- Place spinach in a salad bowl. Top with chilled vegetables. Toss together and enjoy.
