Standing Rib Roast with Creamy Horseradish Sauce

Serves 6 | 

Ingredients:

7 lb rib roast
1/4 cup whipping cream
1/4 cup sour cream
3 tablespoons prepared horseradish
1/8 teaspoon salt

Directions:

  1. Preheat oven to 450°F. Place the rib roast into a roasting pan.
  2. Place the roasting pan into the oven and brown for 15 minutes.
  3. Reduce heat to 325°F. Continue to cook for 90 minutes.
  4. Remove rib roast from the oven and palce on a cutting board. Let sit for 15 minutes before slicing.
  5. Use a hand mixer to whip whipping cream until it forms soft peaks. Fold in sour cream, horseradish and salt.
  6. Scoop a dollop of creamy horseradish sauce next to the rib roast on the serving plates.
