Pan-Seared Chipotle Lime Chicken

The right amount of savory, sweet and tangy.

Ingredients:

4 boneless skinless chicken breasts
3 tablespoons olive oil
3 tablespoons Southwest seasoning blend
2 chipotle chilies in adobo sauce, minced, plus 1 tablespoon adobo sauce
3 tablespoons fresh lime juice
2 cloves garlic, minced
1/2 cup olive oil
2 tablespoons honey

Directions:

  1. Place chicken breasts in a resealable bag. Pour 2 tablespoons of olive oil and Southwest seasoning over the chicken and coat evenly.
  2. In a small bowl, whisk together minced chipotles, adobo sauce, lime juice, minced garlic and remaining olive oil. Divide the marinade in half.
  3. Pour half into the re-sealable bag and coat the chicken. Place in fridge and allow to marinate for at least 20 minutes.
  4. Whisk honey into reserved marinade. Set aside.
  5. Preheat a skillet to medium-high heat. Remove the chicken from bag and place into the skillet. Cook chicken for 4 minutes per side.
  6. Baste chicken with the honey-chipotle mix on one side and cook for 2 more minutes, flip and baste the chicken, cook for 2 minutes.
  7. Transfer chicken to serving plates and pour any remaining honey sauce over the chicken and enjoy!
