Serves 4 | 
A Tex-Mex twist on the classic sandwich.

Ingredients:

1 lb. ground beef
1/2 cup chopped red bell pepper
1/2 cup chopped onion
1 celery rib, chopped
2 cloves garlic, minced
1 chipotle pepper in adobo sauce, chopped
1 teaspoon chili powder
1 teaspoon ground cumin
1 1/2 cups salsa
2 tablespoons chili sauce
4 hamburger buns

Directions:

  1. Cook the beef, red pepper, celery and onion in a large skillet over medium heat until the meat browns.
  2. Drain off the fat. Add the garlic, chipotle pepper, chili powder and cumin and cook a couple minutes longer.
  3. Then stir in the salsa and chili sauce and simmer for about five minutes or so until the mixture starts to thicken.
  4. Some garnishes may include shredded cheese, sour cream, jalalpeños - you name it. Serve on slider or full-size rolls, with corn bread or just by itself like you might serve chili.
