Garlic Shrimp with Jalapeno

Serves 4 | 
Savory, spicy and utterly satisfying.

Ingredients:

1 lb shrimp, peeled and deveined
3 cloves garlic, minced
1 tablespoon freshly squeezed lime juice
1 jalapeno chile, stemmed, deveined, seeded, and finely chopped
3 tablespoons extra virgin olive oil
Sea salt, to taste
Ground black pepper, to taste
Lime wedges, for garnish

Directions:

  1. In a bowl, combine shrimp, garlic, lime juice, chile, and 1 tablespoon olive oil; season with salt and pepper. Place in refrigerator for 45 minutes.
  2. Heat remaining olive oil in a skillet set over medium-high heat.
  3. Remove shrimp from marinade, add to skillet then cook for 2 minutes per side, or until cooked through.
  4. Serve with lime wedges.
