Cranberry Apple Walnut Salad

Hearty, Healthy and Delicious!

Ingredients:

For Salad:
1/3 cup crumbled feta cheese
1 red apple
1/3 cup dried cranberries
1 green apple
6 cups mixed greens
1 cup chopped walnuts
For Dressing:
2 tablespoons honey
1 cup apple juice
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1/4 vegetable oil
4 tablespoons apple cider vinegar

Directions:

  1. Core and chop apples into small chunks.
  2. Toss together apple chunks, feta cheese, cranberries, mixed greens and walnuts in a salad bowl.
  3. In a separate bowl, whisk together apple juice, honey, pepper, salt, oil and apple cider vinegar.
  4. Drizzle dressing over salad and enjoy!
