Cranberry Apple Walnut Salad





Serves 6 |
Hearty, Healthy and Delicious!
Ingredients:
| For Salad: |
| 1/3 cup crumbled feta cheese |
| 1 red apple |
| 1/3 cup dried cranberries |
| 1 green apple |
| 6 cups mixed greens |
| 1 cup chopped walnuts |
| For Dressing: |
| 2 tablespoons honey |
| 1 cup apple juice |
| 1/4 teaspoon ground black pepper |
| 1/2 teaspoon salt |
| 1/4 vegetable oil |
| 4 tablespoons apple cider vinegar |
Directions:
- Core and chop apples into small chunks.
- Toss together apple chunks, feta cheese, cranberries, mixed greens and walnuts in a salad bowl.
- In a separate bowl, whisk together apple juice, honey, pepper, salt, oil and apple cider vinegar.
- Drizzle dressing over salad and enjoy!
