Fresh Strawberry Guacamole

Serves 2 cups | 
Not your average guacamole!

Ingredients:

6 strawberries, (chopped, more for garnish)
1 jalapeno pepper, (stemmed, seeded and finely chopped)
2 avocados, (halved, pitted and scooped)
Salt, (to taste)
1 lime, (zest and juiced)
1 shallot, (finely minced)
3 tablespoons fresh cilantro, (chopped)

Directions:

  1. Mash avocado with a fork in a mixing bowl.
  2. Add lime zest and juice, cilantro, strawberries, shallot and jalapeno pepper. Fold together until well mixed. Sprinkle with salt to taste.
  3. Serve with additional chopped strawberries.
Course: Side, dip
