Pork Tenderloin with Sauteed Apples





Serves 4 |
Tender pork with sauteed apples, entirely delicious!
Ingredients:
1/8 teaspoon cinnamon, ground |
1/4 teaspoon coriander, ground |
1/8 teaspoon nutmeg, ground |
3/8 teaspoon salt |
1/4 teaspoon ground black pepper, freshly ground |
1 pound pork tenderloin, trimmed and cut crosswise into 12 pieces |
Cooking spray |
2 tablespoons butter |
1/3 cup shallots, thinly sliced |
2 cups thinly sliced Gala apple, unpeeled |
1/8 teaspoon salt |
1/4 cup apple cider |
1 teaspoon thyme leaves, fresh |
Directions:
- Heat a large cast-iron skillet over medium-high heat.
- In a small bowl, combine the cinnamon, coriander, nutmeg, salt and black pepper; evenly sprinkle seasoning mixture over pork.
- Coat the skillet with cooking spray, and add pork to skillet. Cook pork for 3 minutes per side or until desired degree of doneness. Remove pork from skillet and keep warm.
- Melt butter in skillet, making sure that it coats the bottom of the skillet.
- Add shallots, apple slices and salt to skillet; sauté ingredients until apple slices start to brown, about 4 minutes.
- Add apple cider to pan; cook until apple is crisp-tender, about 2 minutes.
- Stir in thyme leaves, and serve with pork.
