Apple Cranberry Carrot Salad

Colorful, nutritious, and highly flavorful.

Ingredients:

2 Honeycrisp apples, cored and diced
1 cup unsweetened dried cranberries
2 carrots, peeled, shredded
1/2 cup chopped walnuts
2 tablespoons lemon juice
Black pepper, to taste
Salt, to taste

Directions:

  1. In a large bowl, combine the diced apples, dried cranberries, shredded carrots, and chopped walnuts. Toss to mix. Set aside.
  2. In a small bowl, whisk together the lemon juice with a pinch of pepper and salt.
  3. Pour the lemon dressing over the salad mixture and toss to coat.
  4. Transfer to serving bowls and enjoy.
