Green Goddess Hummus

Ingredients:

2 cans chickpeas, drained with liquid reserved, 15 oz. each
1/3 cup chickpea liquid, more if needed
6 tablespoons lemon juice
1/4 cup olive oil
1/2 cup tahini
1 cup spinach
1 clove garlic
1 green onion, roughly chopped
1/2 cup roughly chopped parsley
1 teaspoon cumin
1/2 teaspoon salt

Directions:

  1. Add the chickpeas, chickpea liquid, lemon juice, olive oil, tahini, spinach, garlic, green onion, parsley, cumin, and salt to a blender.
  2. Blend on high for about 30 seconds, until creamy.
  3. Transfer the hummus to a serving plate. Enjoy!
