Duke's Old-Fashioned Potato Salad

Serves 6-8 | 

Ingredients:

2 lbs. equal-size boiling potatoes, New or Yukon Gold
3 tablespoons cider vinegar
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup chopped green onion
1/2 cup sweet pickle relish
1 cup Duke’s Mayonnaise
3/4 cup chopped celery
Pinch of paprika

Directions:

  1. Cover potatoes with salted water in a 3-quart saucepan. Simmer uncovered for 15-25 minutes, until just tender. Then drain the potatoes in a colander. Set aside.
  2. Whisk together the cider vinegar and salt in a large bowl, until the salt is dissolved.
  3. Once the potatoes are cool enough to handle, peel and cut into 1-inch pieces.
  4. Add the potatoes to the vinegar mixture and toss gently to coat. Then add the black pepper, green onions, sweet pickle relish, Duke’s mayonnaise, and celery. Gently stir together to combine.
  5. Sprinkle with paprika. Serve at room temperature or place in the refrigerator to chill.
