Chocolate Brownie Cookies

Ingredients:

1 cup dark chocolate, chopped+ Add to Shopping List
1/2 cup butter, chopped+ Add to Shopping List
2 large eggs+ Add to Shopping List
3/4 cup caster sugar+ Add to Shopping List
1/2 cup light brown sugar+ Add to Shopping List
1 cup flour+ Add to Shopping List
1/4 teaspoon salt+ Add to Shopping List
1 teaspoon baking powder+ Add to Shopping List
3 tablespoons cocoa powder+ Add to Shopping List

Directions:

  1. Preheat oven to 350° F. Line a baking tray with parchment.
  2. Add the dark chocolate and butter to a pan. Set to low heat and stir until melted and combined.
  3. In a mixing bowl, whisk together the eggs, caster sugar, light brown sugar until fluffy.
  4. Slowly pour the melted chocolate mixture into the sugar mixture. Whisk until combined.
  5. Sift and fold in the flour, salt, baking powder, and cocoa powder into the mixing bowl.
  6. Divide the dough into 10 pieces and roll into balls. Arrange the dough balls on the baking tray and gently press down to flatten.
  7. Place into the oven and bake for about 12 minutes, until edges are firm, and centers are soft.
  8. Remove from the oven and rest for 10 minutes. Transfer to a cooling rack to cool completely.
