Chocolate Brownie Cookies





Serves 10 |
Two of the best treats in one.
Ingredients:

1 cup dark chocolate, chopped+ Add to Shopping List |
1/2 cup butter, chopped+ Add to Shopping List |
2 large eggs+ Add to Shopping List |
3/4 cup caster sugar+ Add to Shopping List |
1/2 cup light brown sugar+ Add to Shopping List |
1 cup flour+ Add to Shopping List |
1/4 teaspoon salt+ Add to Shopping List |
1 teaspoon baking powder+ Add to Shopping List |
3 tablespoons cocoa powder+ Add to Shopping List |
Directions:
- Preheat oven to 350° F. Line a baking tray with parchment.
- Add the dark chocolate and butter to a pan. Set to low heat and stir until melted and combined.
- In a mixing bowl, whisk together the eggs, caster sugar, light brown sugar until fluffy.
- Slowly pour the melted chocolate mixture into the sugar mixture. Whisk until combined.
- Sift and fold in the flour, salt, baking powder, and cocoa powder into the mixing bowl.
- Divide the dough into 10 pieces and roll into balls. Arrange the dough balls on the baking tray and gently press down to flatten.
- Place into the oven and bake for about 12 minutes, until edges are firm, and centers are soft.
- Remove from the oven and rest for 10 minutes. Transfer to a cooling rack to cool completely.
