Feta and Spinach Quesadillas

Quick, wholesome and delicious!

Ingredients:

4 burrito-size tortillas
2 cups chopped fresh spinach
1 cup crumbled feta cheese
2 tablespoons butter

Directions:

  1. Spread and even amount of the spinach and feta on one half of each tortilla.
  2. Fold the tortillas in half and press gently to seal.
  3. Bring a medium skillet to medium heat. Add a small amount of the butter to the skillet. Once melted, place a quesadilla in the skillet and cook for 2-3 minutes on each side until golden brown and crispy. Transfer to a plate and keep warm. Repeat the process for remaining quesadillas.
  4. Use a knife or pizza cutter to slice the quesadilla into wedges. Enjoy!
