Slow Cooker Chicken Parmesan Soup

The newest twist on a classic dish.

Ingredients:

3 boneless chicken breasts
4 cups chicken broth
1 can crushed tomatoes, 28 oz.
1 can tomato sauce, 15 oz.
1 tablespoon minced garlic
2 teaspoons Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
8 oz rotini pasta
1 cup heavy cream
1 cup shaved parmesan cheese
1/2 cup breadcrumbs
1 tablespoon butter
1 1/2 cup shredded mozzarella, for topping

Directions:

  1. Add the chicken breast, chicken broth, crushed tomatoes, tomato sauce, garlic, Italian seasoning, salt and pepper to the slow cooker bowl. Stir together until combined.
  2. Lock the lid on and cook on low for 8 hours or high for 4 hours.
  3. Shred the chicken in the slow cooker bowl.
  4. Stir in the rotini pasta, heavy cream and shredded parmesan cheese. Place the lid back on and cook on low for 30 minutes.
  5. Melt the butter in a saucepan on low. Add the breadcrumbs and saute for 6 minutes.
  6. Ladle the soup into serving bowls. Top with breadcrumbs and shredded mozzarella. Enjoy!
