Creamy Chicken Fajita Pasta

Serves 4 | 
All the flavors minus the tortilla.

Ingredients:

12 oz pasta, your preference
3 tablespoons olive oil
1 lb chicken breast, diced
1 oz fajita seasoning
1 green pepper, chopped
1 red pepper, chopped
1 yellow onion, chopped
3/4 cup double cream
1/2 cup grated cheddar
Ground black pepper, to taste

Directions:

  1. Cook the pasta in salted water according to the package directions.
  2. Pour the olive oil into a large pan. Bring to medium heat and cook the chicken for 4-5 minutes, until slightly golden.
  3. Sprinkle the fajita seasoning over the chicken. Cover the pan and let cook for 1 minute. Then add the green and red peppers, along with the yellow onion. Cook and stir for 4-5 minutes until the vegetables have softened. Pour in the double cream and let cook for another minute.
  4. Pour the pasta into the pan and stir together. Add the grated cheddar and stir until the cheese melts.
  5. Transfer to serving plates. Season with black pepper. Enjoy!
