Pineapple Peach Lime Agua Fresca

Serves 4 | 
Sweet, slightly tart and wholly refreshing.

Ingredients:

For Simple Syrup:
4 tablespoons water
4 tablespoons sugar
For Agua Fresca:
2 cups water
3 ripe peaches, peeled and cubed
1 cup fresh pineapple chunks
6 tablespoons lime juice
1 cup frozen sliced peach
Lime slices, for serving
Fresh mint, for serving

Directions:

  1. Pour the water and sugar into a saucepan. Bring to medium heat. Stir until the fully sugar dissolves, then let simmer for 1 minute. Remove the saucepan from the heat and let cool.
  2. Pour the water into a blender then add the peaches and pineapple. Pulse until smooth. Pour through a fine mesh sieve into a pitcher, use a spoon to press out the last of the liquid. Pour the remaining 1 cup of water, the lime juice and the simple syrup into the pitcher. Stir together until thoroughly incorporated.
  3. Place the pitcher into the refrigerator to chill.
  4. When ready to serve, add crushed ice to four tall glasses. Distribute the frozen peaches amongst the glasses and pour the Agua fresca over the ice and peaches. Garnish with a few lime slices and fresh mint.
