Black Bean Tacos with Avocado Cilantro Lime Crema

Yummy, healthy, and surprisingly easy to make.

Ingredients:

2 cans black beans, drained and rinsed, 14.5 oz each
1 cup prepared salsa
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1/2 cup plain Greek yogurt
1/2 avocado
1 tablespoon lime juice
1 clove garlic, minced
1 cup fresh cilantro
Salt, to taste
Ground black pepper, to taste
8 corn tortillas, warmed, 6-inch
Diced tomatoes, for serving
Shredded cheese, for serving
Shredded romaine lettuce, for serving

Directions:

  1. In a medium saucepan combine black beans, salsa, chili powder and cumin. Simmer for 10 minutes, stirring occasionally.
  2. Place the Greek yogurt, avocado, lime juice, garlic, and cilantro in a food processor, pulse until finely minced. Season with salt and pepper.
  3. Spread the black bean mixture across the middle of each tortilla. Spoon the avocado cilantro lime crema over the black beans. Then add the tomatoes, cheese, and lettuce. Enjoy!
