Roasted Red Pepper Hummus Pasta





Serves 4 |
A one pot meal that’s ready in 30 minutes.
Ingredients:
| 8 oz penne pasta |
| 1 tablespoon olive oil |
| 1/2 pint cherry tomatoes |
| 1 clove garlic, minced |
| 1 cup roasted red pepper hummus |
| 3 tablespoons lemon juice |
| 1/2 teaspoon salt |
| 1/4 teaspoon ground black pepper |
| 8 basil leaves, julienned |
| 2 cups baby spinach |
Directions:
- Fill a pot with water and bring to a boil. Add the penne pasta to the pot and cook according to the package directions. Ladle out 1 cup of pasta water before draining and save for later. Set pasta aside in a large bowl.
- Return the pot to the stovetop. Bring to medium heat and pour in the olive oil. Add the cherry tomatoes and cook for 4-5 minutes, or until cherries begin to soften and burst. Add the minced garlic and cook for 30 seconds.
- Add half of the reserved pasta water to the pot. Add the hummus, lemon juice, salt, and pepper, whisk until smooth. Add additional pasta water if needed to thin out the sauce.
- Pour cooked pasta into the pot. Add the basil and spinach. Cook and stir for 2 minutes, until the spinach begins to wilt.
- Remove from the heat and spoon into serving bowls. Enjoy!
