Awesome Blueberry Cobbler

Move over blueberry pie!

Ingredients:

4 pints fresh blueberries
2 tablespoons lemon juice
1/2 cup granulated sugar, more for dusting
1 teaspoon ground cinnamon
2 tablespoons cornstarch
1 cup flour
3/4 cup milk
2 teaspoons baking powder
1 cup sugar
1/4 teaspoon salt
6 tablespoons butter, melted

Directions:

  1. Preheat oven to 400° F. Grease a 10-inch tart pan with baking spray.
  2. In a mixing bowl, combine the blueberries, lemon juice, cinnamon, sugar and cornstarch. Stir until just combined.
  3. Pour the blueberry mixture into the tart pan.
  4. Combine the flour, milk, baking powder, sugar and salt in a mixing bowl. Stir until just until combined.
  5. Spoon dollops of the dough evenly over the top of the blueberry mixture.
  6. Drizzle the melted butter over top and dust with sugar.
  7. Set the tart pan on a cookie sheet and place in the oven to bake for 25-35 minutes, until the top is golden brown.
  8. Remove from the oven and let cool for 15 minutes before serving.
