Slow Cooker Mongolian Chicken

The take-out classic made even easier.
Ingredients:
1 lb boneless skinless chicken breasts, cubed |
1/4 cup cornstarch |
1/2 cup soy sauce |
1/2 cup brown sugar |
2 tablespoons olive oil |
1/2 cup water |
1 cup grated carrots |
1/2 teaspoon minced garlic |
Cooked rice, for serving |
Chopped green onions, for garnish |
Directions:
- Place the chicken into a resealable container. Sprinkle cornstarch over the chicken. Place the lid on the container and shake to coat chicken.
- Add soy sauce, brown sugar, olive oil, water, grated carrots and minced garlic to the container. Cover and shake to coat.
- Transfer entire contents of container to the bowl of the slow cooker.
- Place the lid on the slow cooker and set to high to cook for 3 hours or set to low to cook for 5 hours.
- Spoon cooked rice into serving bowls. Spoon Mongolian chicken and sprinkle green onions over top.
