Cantaloupe and Prosciutto Salad with a Balsamic Vinaigrette





Serves 1 |
A salad that's in a league of its own.
Ingredients:
| 1 cantaloupe, scooped into balls |
| 8 oz mixed greens |
| 8 slices prosciutto, chopped |
| 8 oz small mozzarella balls, halved |
| 1/2 cup olive oil |
| 1/4 cup balsamic vinegar |
| 1/2 teaspoon finely chopped fresh oregano |
| 1/2 teaspoon Dijon mustard |
| Sea salt, to taste |
| Fresh ground black pepper, to taste |
Directions:
- Whisk together balsamic vinegar, oregano and Dijon mustard in a mixing bowl. Once mixed, slowly pour in olive oil and whisk together. Season with salt and pepper.
- Place mixed greens in a salad bowl. Pour a small amount of the balsamic vinaigrette over greens and toss together. Top greens with halved mozzarella balls, chopped prosciutto and melon balls. Toss together and drizzle more of the dressing over top.
- Scoop salad into serving bowls and season with salt and pepper.
