Italian Sausage and Vegetable Lasagna

A delectable step up from traditional lasagna.

Ingredients:

1 box lasagna noodles, 1 lb.
2 lb sweet Italian sausage
1 sweet onions, chopped
4 cloves garlic, minced
1 cup diced carrots
1 bag spinach, 10 oz.
1 jar pasta sauce, 16 oz.
1 container Ricotta cheese, 8 oz.
4 cups shredded mozzarella cheese
2 tablespoons dried Italian seasoning

Directions:

  1. Cook lasagna noodles according to package and drain. Preheat oven to 350° F.
  2. Bring a saute pan to medium heat. Saute onions, garlic, carrots and sausage, until meat is no longer pink, and vegetables are tender.
  3. Grease a large baking dish with cooking spray. Layer pasta sauce, noodles, ricotta cheese, meat & veggie mixture, spinach, shredded mozzarella cheese in even amounts. Repeat layers three times.
  4. Finish top layer with remaining shredded cheese and Italian seasoning. Cover with foil and bake for about 45 minutes.
