Homemade Cauliflower Pizza

Serves 1 pizza |
A healthy alternative to traditional pizza.
Ingredients:
1 head cauliflower, stalk removed |
2 eggs, lightly beaten |
1/4 cup grated parmesan cheese |
1/2 cup shredded mozzarella |
1/2 teaspoon kosher salt |
1/4 teaspoon garlic powder |
1/2 teaspoon dried oregano |
Desired toppings, cheese, pepperoni, etc. |
Directions:
- Preheat oven to 400° F. Line a baking sheet with parchment paper.
- Break cauliflower into small pieces. Add cauliflower pieces to food processor or blender, pulse until cauliflower is fine. Transfer to paper towels and gently dab to remove moisture.
- In a mixing bowl, combine cauliflower, eggs, parmesan and mozzarella cheeses, salt, garlic powder and oregano. Mix together well.
- Transfer dough to baking sheet. Work and spread cauliflower dough into a pizza crust. Place baking sheet in oven. Bake for 20 minutes.
- Add toppings to pizza, bake an additional 10 minutes. Remove from oven, cut into slices and enjoy!
