Double Chocolate Ice Cream Sandwiches

Serves 5 Sandwiches | 

Ingredients:

2 pints of vanilla ice cream, softened
15 cream-filled chocolate sandwich cookies, chopped
10 chewy chocolate chip cookies

Directions:

  1. In a bowl, stir chocolate sandwich cookie pieces into softened ice cream. Freeze for 30 minutes.
  2. Spread the ice cream, in an even layer, onto the flat sides of 5 of the chocolate chip cookies. Top with remaining 5 cookies.
  3. Place each ice cream sandwich in a zip-top plastic sandwich bag. Seal and freeze for 1 to 1 ½ hours.
