Mexican-Style Breakfast Sandwich

A simple breakfast sandwich that's absolutely delicious!

Ingredients:

2 eggs
2 tablespoons salsa
2 English muffins, (toasted)
2 teaspoons cilantro, (chopped)
2 tablespoons Mexican blend cheese

Directions:

  1. Spray or grease a microwave safe bowl with cooking spray or butter.
  2. Crack eggs in the bowl and whisk.
  3. Microwave for 30 seconds. Remove and stir gently with a fork. Place eggs in microwave again and cook for 10 seconds. (Check eggs to see if they are the consistency you desire. If not, stir gently again and place in microwave, cooking and stirring every 10 seconds until eggs are solid.)
  4. Spread 1 tablespoon of salsa on bottom half of each toasted muffin.
  5. Divide eggs evenly on top of salsa.
  6. Top each with cilantro and cheese.
  7. Toast in a toaster oven until cheese is melted.
  8. Top each with remaining English muffin halves.
Course: Breakfast, snack, brunch
