Find this customer favorite dressing at your local Bianchini’s! The original recipe for this tasty vinaigrette originated in 1870 at a small hillside restaurant on the Cote d’azur. The vinaigrette was served exclusively in the restaurant until 1941, when longtime protégé Marianette Becham was entrusted with the recipe. Marianette moved to the United States with Jean Becham, both working in exclusive resorts until the pair opened the French Poodle Restaurant in 1961. They sold their famous vinaigrette in wine bottles to restaurant patrons and the tradition has continued ever since. Enjoy French Poodle Vinaigrette on more than just salads, blend it up into a dipping sauce, use it as a marinade for poultry and seafood, sauté it with veggies, or drizzle some on a sandwich for added zing.

This just in, our specialty cheese department now has Petit Vaccarinus cheese is in stock!

Petit Vaccarinus is a seasonal soft cheese that originates from Switzerland, that’s available only during the winter months. Made with milk from mountain cows that were brought down from their pastures for the season. After the curds have been molded and drained, the cheese is lightly pressed and left to set. Once firm, the cheese is wrapped in a flexible strip of spruce bark and brined for several hours, then left in a cellar to age for approximately four weeks. During the aging process, the cheese is turned and washed with either fresh water or salt water. Once the aging is finished the cheese is placed in to a spruce box that’s slightly smaller in diameter than the cheese wheel, giving the surface its signature rippled texture. Before serving, allow the cheese to rest at room temperature for several hours before cutting into the rind. The Petit Vaccarnius’ soft texture makes it excellent for dipping into with soft breads, like a fondue.

Have fun with fondue this November by hosting a retro fondue party.

Our specialty cheese department has a wonderful selection of high-quality cheeses from Gruyere to Swiss. Let us help you find the perfect cheese to make your event a big hot. And if you’re going for the dessert route with a chocolate fondue, our staff is more than happy to show you some of our finest chocolates. We would love for you to try our Classic Cheese Fondue recipe below, it strikes the right balance of melty cheese goodness with rich flavor.

Classic Cheese Fondue

Surprisingly simple and perfect for sharing.

Ingredients

  • 1 cup dry white wine
  • 1/2 lb. shredded Swiss cheese
  • 1/2 lb. shredded Gruyere cheese
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 lb. loaf French bread, cut into 1-inch pieces

Directions

Simmer white wine in the fondue pot. Add in Swiss and Gruyere cheeses, a 1/4 lb. at a time. Stir together until mixed and cheeses have melted. Add in the flour and stir together. Add in the salt and ground nutmeg and stir together.

 

Enjoy fondue with French bread pieces.
