Honey Ginger Carrot Soup

Serves 6 | 
A uniquely flavored lunchtime soup.

Ingredients:

12 carrots, peeled and chopped
2 cloves garlic
1 yellow onion
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
4 cups water
2 teaspoons grated fresh ginger
Salt, to taste
3 tablespoons honey

Directions:

  1. Trim, peel, and chop the garlic and yellow onion.
  2. Add olive oil and butter to a large pot. Bring to medium heat. Add the garlic and onion, cook and stir until onion is translucent.
  3. Pour the water into the pot. Add carrots and ginger, season with salt and cook for about 45 minutes. Turn off the heat and let the soup cool.
  4. Once cooled, pour the soup in batches into a blender and puree. Return the puree to the pot.
  5. Bring the pot to medium-high heat and the soup to a boil. Add the honey to the soup and stir until dissolved.
  6. Spoon soup into serving bowls and enjoy!
