Honey Ginger Carrot Soup





Serves 6 |
A uniquely flavored lunchtime soup.
Ingredients:
| 12 carrots, peeled and chopped |
| 2 cloves garlic |
| 1 yellow onion |
| 2 tablespoons extra-virgin olive oil |
| 2 tablespoons unsalted butter |
| 4 cups water |
| 2 teaspoons grated fresh ginger |
| Salt, to taste |
| 3 tablespoons honey |
Directions:
- Trim, peel, and chop the garlic and yellow onion.
- Add olive oil and butter to a large pot. Bring to medium heat. Add the garlic and onion, cook and stir until onion is translucent.
- Pour the water into the pot. Add carrots and ginger, season with salt and cook for about 45 minutes. Turn off the heat and let the soup cool.
- Once cooled, pour the soup in batches into a blender and puree. Return the puree to the pot.
- Bring the pot to medium-high heat and the soup to a boil. Add the honey to the soup and stir until dissolved.
- Spoon soup into serving bowls and enjoy!
