Avocado, Corn and Tomato Salad

A symphony of wonderful flavors.

Ingredients:

1/2 cup extra-virgin olive oil
1 tablespoon honey
2 tablespoons fresh lime juice
1 teaspoon finely grated lime zest
1 1/2 cups packed fresh cilantro
2 teaspoons Kosher salt
1 teaspoon ground black pepper
2 avocados, diced
3 cups corn kernels
1 1/2 lb grape tomatoes, halved
1 lb fresh mozzarella, diced

Directions:

  1. Combine olive oil, honey, lime juice, lime zest, cilantro, salt and pepper in a blender. Pulse until smooth. Set aside.
  2. Combine avocado, corn, grape tomatoes and mozzarella cheese in a salad bowl. Drizzle the dressing over top and toss to combine.
  3. Allow to sit and marinate for 15 minutes before serving or cover and refrigerate until ready to serve.
