Avocado, Corn and Tomato Salad

Serves 8 |
A symphony of wonderful flavors.
|1/2 cup extra-virgin olive oil|
|1 tablespoon honey|
|2 tablespoons fresh lime juice|
|1 teaspoon finely grated lime zest|
|1 1/2 cups packed fresh cilantro|
|2 teaspoons Kosher salt|
|1 teaspoon ground black pepper|
|2 avocados, diced|
|3 cups corn kernels|
|1 1/2 lb grape tomatoes, halved|
|1 lb fresh mozzarella, diced|
- Combine olive oil, honey, lime juice, lime zest, cilantro, salt and pepper in a blender. Pulse until smooth. Set aside.
- Combine avocado, corn, grape tomatoes and mozzarella cheese in a salad bowl. Drizzle the dressing over top and toss to combine.
- Allow to sit and marinate for 15 minutes before serving or cover and refrigerate until ready to serve.
