Avocado, Corn and Tomato Salad





Serves 8 |
A symphony of wonderful flavors.
Ingredients:
1/2 cup extra-virgin olive oil |
1 tablespoon honey |
2 tablespoons fresh lime juice |
1 teaspoon finely grated lime zest |
1 1/2 cups packed fresh cilantro |
2 teaspoons Kosher salt |
1 teaspoon ground black pepper |
2 avocados, diced |
3 cups corn kernels |
1 1/2 lb grape tomatoes, halved |
1 lb fresh mozzarella, diced |
Directions:
- Combine olive oil, honey, lime juice, lime zest, cilantro, salt and pepper in a blender. Pulse until smooth. Set aside.
- Combine avocado, corn, grape tomatoes and mozzarella cheese in a salad bowl. Drizzle the dressing over top and toss to combine.
- Allow to sit and marinate for 15 minutes before serving or cover and refrigerate until ready to serve.
