Ginger-Honey Salmon

Perfect for dinner parties.

Ingredients:

2 tablespoons finely chopped ginger
2 tablespoons honey
1/4 cup soy sauce
1/2 cup orange juice
1 teaspoon toasted sesame oil
2 lb salmon fillet, skin on, cut into 6 pieces
2 tablespoons extra-virgin olive oil

Directions:

  1. Combine ginger, honey, soy sauce, orange juice and sesame oil in a saucepan. Simmer over medium-high heat, then reduce temperature to medium-low and cook for 5 minutes.
  2. Add half of the marinade to a large baking dish, let sit for 10 minutes. Place the fish in the dish, turn to coat with marinade. Place fish skin side up. Cover and let sit for 10 minutes.
  3. Heat olive oil in a large frying pan over medium-high heat. Place fish in pan, skin side down, cover and cook for about 3 minutes, until skin is crisp. Turn fish over and cook for an additional 3 minutes, until opaque throughout.
