Chocolaty, Chocolaty Cupcakes

Ingredients:
| 1 cup flour |
| 1 teaspoon baking soda |
| 1/3 cup unsweetened cocoa |
| 1/8 teaspoon salt |
| 4 tablespoons butter, softened |
| 2/3 cup granulated sugar |
| 1 teaspoon vanilla |
| 1/2 cup egg substitute |
| 1/2 cup buttermilk |
| 1 oz. dark chocolate, finely chopped |
| Powdered sugar, for sprinkling |
Directions:
- Preheat oven to 350° F.
- Loosely spoon flour into a dry measuring cup then level off with a knife. Combine flour, baking soda, cocoa, and salt; whisk to combine then set aside.
- Place butter and sugar in a large bowl; with a mixer, beat ingredients at medium speed for about 3 minutes, until combined. Add vanilla and egg substitute to bowl then beat until combined. Alternately add flour mixture and buttermilk to granulated sugar mixture. Fold in chocolate.
- Spoon batter into 12 lined muffin cups. Bake for about 18 minutes, or until a wooden toothpick inserted in the middle of a cupcake comes out clean. Remove cupcakes from pan then cool completely on a wire rack. Sprinkle cupcakes with powdered sugar right before serving.
