Mini Taco Cupcakes

These little creations are some of the best tacos you’ll have.
Ingredients:
2 cups cheddar cheese, (shredded) |
1 oz taco seasoning |
1 lb ground beef |
1 1/2 tablespoons chili oil |
36 tortilla chips, (crushed) |
16 oz refried beans |
36 wonton wrappers |
Cooking spray |
Toppings |
Onion, (diced) |
Sour cream, (optional) |
Cilantro, (optional, diced) |
Tomatoes, (optional, diced) |
Directions:
- Preheat oven to 375° F.
- Pour chili oil into a large skillet, turn heat to medium-high. Once hot, add taco seasoning and ground beef. Stir ingredients together.
- Coat an 18-count muffin tin with cooking spray. Place wonton into each muffin cup, fill each with 1 tablespoon of refried beans, top with small amount of crushed tortilla chips. Spoon 1 tablespoon taco meat into muffin cup, top with cheese. Repeat process with remaining muffin cups. Then add second layer of wontons, chips, beans, meat and cheese on top of each.
- Place muffin tin into oven, bake 15-20 minutes. Remove tin from oven, let cool for 15 minutes. Remove taco cupcakes from tin, sprinkle choice toppings on and enjoy!
