Spicy Skillet Chicken Breasts with Veggies

Serves 4 | 
A hot and highly flavorful dish.

Ingredients:

1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 boneless, skinless chicken breasts, halved
2 tablespoons olive oil
1 red onion, diced
1 red bell pepper, diced
1 zucchini, chopped
1 lime, quartered

Directions:

  1. Mix together paprika, cayenne, chili powder, salt and black pepper in a small bowl. Coat chicken with seasoning mix.
  2. Pour olive oil into a large skillet and bring to medium heat. Once hot, add chicken and cook for 8-10 minutes per side.
  3. Remove chicken from skillet and tent with aluminum foil to keep warm.
  4. Place red onion, red bell pepper and zucchini in the same skillet. Reduce heat to low and cook for 4-6 minutes.
  5. Transfer chicken with veggies to 4 serving plates. Spritz lime juice over chicken & veggies and enjoy!
