Spicy Skillet Chicken Breasts with Veggies

Serves 4 |
A hot and highly flavorful dish.
Ingredients:
1/4 teaspoon paprika |
1/4 teaspoon cayenne pepper |
1/4 teaspoon chili powder |
1/4 teaspoon salt |
1/4 teaspoon ground black pepper |
2 boneless, skinless chicken breasts, halved |
2 tablespoons olive oil |
1 red onion, diced |
1 red bell pepper, diced |
1 zucchini, chopped |
1 lime, quartered |
Directions:
- Mix together paprika, cayenne, chili powder, salt and black pepper in a small bowl. Coat chicken with seasoning mix.
- Pour olive oil into a large skillet and bring to medium heat. Once hot, add chicken and cook for 8-10 minutes per side.
- Remove chicken from skillet and tent with aluminum foil to keep warm.
- Place red onion, red bell pepper and zucchini in the same skillet. Reduce heat to low and cook for 4-6 minutes.
- Transfer chicken with veggies to 4 serving plates. Spritz lime juice over chicken & veggies and enjoy!
