Chipotle-Lime Grilled Chicken

Tangy and savory.

Ingredients:

1/4 cup fresh lime juice
1/4 cup olive oil
3 tablespoons chipotle Tabasco
3/4 teaspoon salt
6 boneless, skinless chicken thighs
2 teaspoon honey

Directions:

  1. Lightly oil the grill rack with cooking oil or non-stick spray. Preheat grill to a medium-hot temperature.
  2. Combine lime juice, oil, Tabasco, and salt in a small bowl. Place chicken in a large sealable bag. Measure out 1/3 cup marinade and add to the chicken, reserving the remaining marinade. Seal bag, carefully pressing out the air. Allow chicken to marinate at room temperature, about 15 minutes. To make the glaze, stir honey into remaining marinade until dissolved.
  3. Grill chicken, turning every 2 to 3 minutes until it has reached and internal temperature of 180° F, for 8-10 minutes.
  4. Brush chicken with the glaze, then continue to grill, turning over once, until the glaze is lightly browned. Remove chicken from grill and allow it to rest for 10 minutes. Drizzled with remaining sauce and serve.
