Scrumptious Shrimp Salad

Fresh and full of flavor.

Ingredients:

5 quarts water
3 tablespoons kosher salt, plus 1 teaspoon
1 lemon, quartered
4 lb shrimp
Cold water, for chilling
2 cups mayonnaise
1 teaspoon Dijon mustard
2 tablespoons white wine vinegar
6 tablespoons minced fresh dill
1 teaspoon freshly ground black pepper
5 stalks celery, minced
1 red onion, minced

Directions:

  1. In a large saucepan, bring water, 3 tablespoons salt and lemon quarters to a boil. Reduce heat to medium and add half of the shrimp. Cook uncovered for 4 minutes. With a slotted spoon, remove shrimp and transfer to a bowl of cold water. Bring saucepan back to a boil then repeat process with remaining shrimp.
  2. In a mixing bowl, whisk together mayonnaise, mustard, vinegar, dill, remaining 1 teaspoon salt, and black pepper. Add shrimp, celery and onion to bowl and stir together to combine.
