Chicken Breakfast Sandwich

The best breakfast items in one sandwich.
Ingredients:
1 box waffle mix, 28 oz. |
4 boneless skinless chicken breasts |
4 slices Cheddar cheese |
8 slices bacon, cooked |
8 eggs |
Maple syrup, for topping |
Salt, to taste |
Ground black pepper, to taste |
Seasoned Salt, to taste |
Directions:
- Preheat the oven to 300° F.
- Make 2 batches of waffles according to package instructions. Cut waffles in half to make buns for chicken.
- Season both sides of chicken breasts with a small amount of salt, pepper, and seasoned salt.
- Heat a skillet over medium heat and cook chicken breasts for about 7 minutes per side.
- Place the chicken on a baking sheet. Top each with 1 slice of cheddar cheese. Place in the oven for 2-3 minutes or until the cheese is melted.
- Crack 8 eggs into a mixing bowl and whisk together. Pour into a skillet over medium heat and cook until light and fluffy. Season with salt and pepper.
- Place a chicken breast on top of a wale half. Add 2 slices of bacon and a heaping scoop of scrambled eggs. Top with another wafer. Repeat until all sandwiches have been assembled.
- Drizzle maple syrup over the top. Serve warm and enjoy!
