Veggie and Breakfast Sausage Lasagna

Wholesome, easy and totally delicious!

Ingredients:

1 box lasagna noodles, 16 oz.
2 lb breakfast sausage
2 sweet onions, chopped
6 cloves garlic, minced
1 cup diced carrots
1 bag fresh spinach, 16 oz.
1 jar pasta sauce, 24 oz.
1 container Ricotta cheese, 15 oz.
4 cups shredded mozzarella cheese, more for topping
2 tablespoons Italian seasoning, more for topping

Directions:

  1. Cook lasagna noodles according to package directions and drain water.
  2. Preheat oven to 350° F.
  3. Cook sausage, onions, garlic, and carrots in a large pan over medium heat, until sauce is thoroughly cooked, and vegetables are tender.
  4. Grease a large baking dish with non-stick cooking spray. Layer ingredients pasta sauce, noodles, ricotta cheese, sauce and veggie mix, spinach, shredded cheese. Repeat with remaining ingredients.
  5. Finish the top layer with shredded cheese and Italian seasoning. Cover with foil and for 45 minutes.
  6. Cut lasagna into 8 pieces and enjoy!
