Healthy Veggie Baked Ziti





Serves 4 |
Highly flavorful and colorful.
Ingredients:

4 oz ziti+ Add to Shopping List |
1 cup shredded mozzarella cheese+ Add to Shopping List |
1/4 cup ricotta cheese+ Add to Shopping List |
2 tablespoons chopped basil+ Add to Shopping List |
2 cloves garlic, minced+ Add to Shopping List |
1 tablespoon olive oil+ Add to Shopping List |
2 teaspoons chopped fresh oregano+ Add to Shopping List |
2 cups chopped tomato+ Add to Shopping List |
2 cups chopped yellow squash+ Add to Shopping List |
1 cup chopped zucchini+ Add to Shopping List |
1/2 cup chopped onion+ Add to Shopping List |
3/4 teaspoon salt+ Add to Shopping List |
1/8 teaspoon crushed red pepper+ Add to Shopping List |
1 egg, lightly beaten+ Add to Shopping List |
Directions:
- Preheat oven to 400° F. Cook pasta according to package.
- In a skillet, heat to medium-high and add oil. Saute zucchini, squash and onion for 5 minutes. Add garlic and tomato, saute for 3 minutes. Remove from heat and add to pasta, mix in pepper, herbs, 1/2 cup of mozzarella and 1/2 teaspoon of salt.
- Combine remaining salt, egg and ricotta, and then add to pasta mix. Coat baking dish with cooking spray and place ingredients into dish. Sprinkle remaining mozzarella on top and bake for 15 minutes.
