Bacon and Broccoli Frittata





Serves 4 |
A bacon, broccoli and egg masterpiece.
Ingredients:
| 4 slices bacon |
| 4 eggs |
| 1 cup half and half |
| 1 cup grated Swiss cheese |
| 2 cups broccoli florets |
| 1/4 teaspoon salt |
| 1/8 teaspoon garlic powder |
| 1/8 teaspoon lemon pepper |
| Fresh rosemary, for garnish |
Directions:
- Preheat oven to 350° F.
- Arrange bacon in a large pan. Bring to medium heat and cook bacon until slightly crisp. Remove bacon from the pan and place on paper towels. Once cooled, crumble bacon.
- Combine eggs, half and half and Swiss cheese in a mixing bowl. Beat together until combined. Stir in broccoli, salt, garlic powder, lemon pepper and half of the crumbled bacon. Stir until incorporated.
- Pour egg mixture into a pie plate.
- Place into the oven and bake for 40-50 minutes, until set. Remove from the oven and allow to stand 5 minutes before serving. Top with remaining bacon. Garnish with rosemary.
