Rotisserie Chicken Vegetable Soup

Simply scrumptious!

Ingredients:

1 rotisserie chicken
8 cups chicken broth
1 tablespoon butter
1 teaspoon Herbes de Provence
2 carrots, peeled and chopped
1 onion, chopped
1 rib celery, chopped
1 cup broccoli, chopped
1 cup peas
1 cup spinach, chopped
1 cup cooked rice
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Remove all the meat from chicken and place the meat in a container. Set aside.
  2. Bring a large pot to medium-low heat. Add butter, Herbes de Provence, carrots, onion and celery. Cook for 10 minutes, stirring occasionally. Add the chicken broth and simmer for an additional 15 minutes.
  3. Add broccoli, peas, spinach, rice and chicken. Return to a simmer and cook until the ingredients are warmed through. Season with salt and pepper.
