Chocolate Mint Ice Cream Sandwiches

Ingredients:
| 2 pints vanilla ice cream |
| 16 mint chocolate creme sandwich cookies, chopped |
| 12 chewy chocolate cookies |
Directions:
- In a large bowl, stir together softened ice cream and sandwich cookie pieces. Cover and place in the freezer for 30 minutes.
- Spread the ice cream evenly onto 6 chocolate cookies. Place a second chocolate chip cookie on top.
- Place the cookies in a bag and transfer to the freezer, chill for 2 hours.
- Remove from freezer and enjoy!
