Mango Shrimp Tacos

These tacos are fun,fruity and flavorful.

Ingredients:

1 lb shrimp, peeled and deveined
1 mango, chopped
4 tablespoons lime juice
2 cloves garlic, sliced
1/4 cup chopped fresh cilantro
2 tablespoons cooking oil
Salt, to taste
1 avocado, diced, for garnish
Lettuce, for garnish
8 soft taco tortillas, corn or flour

Directions:

  1. Pour cooking oil in a large pan and bring to medium-high heat. Once hot, add shrimp and garlic. Season with salt. Sauté and stir for about 5 minutes. (Shrimp should be opaque)
  2. Add mango and cilantro to pan. Cook for about a minute. Stir in lime juice and remove pan from heat. Add salt if needed.
  3. Warm tortillas in the microwave and spoon equal amounts of taco filling into each tortilla. Add avocado and lettuce to tacos and enjoy.
